Are You Hungry?

Does reading Noon’s tales of mealtime make you hungry? We will share some of the McClanahan Clan recipes with you including some shortcuts the best cooks use.
Food is a big part of all families and is especially important in big southern families. Most social events in small towns center around food and Noon, Mississippi, is no exception. Ms. Polly and her brother, Rocky, are both wonderful cooks and an invitation to share their meals is always welcome, as Sheriff Freddy Blalock could tell you, if he decided to speak. Here are a couple of recipes.
Biscuits
2 ¼ cups Bisquick (Rocky says they are as good as scratch)
1 teaspoon vanilla
1/8 cup brown sugar
2/3 cup milk
Stir only until all flour mix is wet (wetter makes fluffier biscuits but is also harder to handle). Turn out on flour-covered board. Dust with flour and pat out flat. Cut out biscuits by pushing cutter straight down (don’t twist). Miss Polly uses a Mason jar to cut them.
Melt 1/3 stick butter in glass dish. Coat both sides of biscuits with butter and place touching each other.
Bake at 450 degrees until tops are brown. Serve with honey and peaches. Slice with knife, eat with fork, fingers or chopsticks.
Potatoes Gourmet
6 medium red potatoes
2 cups cheddar cheese, grated
6 tablespoons butter
1 ½ cups sour cream
Salt and pepper to taste
Cook potatoes in skin till tender. Cool and peel. Cut into cubes.
Melt butter in microwave, add cheese until melted, then add sour cream.
Fold mixture in with potatoes.
Add salt and pepper.
Put in baking dish sprayed with cooking spray.
Cook at 375 degrees for 25 minutes or until bubbly.
